Bones are the individual sections of an armature that are used to deform the mesh. Bones act like other objects (they have properties and can have constraints) but are invisible in the render.

Why is this arm bone bending the other way after exiting edit mode?
Its standard practice to add a slight bend in the arms when in Edit Mode, which is what Faceb is eluding to.
That said, you can quickly fix your problem by changing your Pole Angle to 180.
