May 1 at 15:26 comment added Brock Brown Make sure to apply your transformations before doing this, or you might get wrong inset distances, I made this mistake. select objectctrl + aall transformations You should do this compulsively in Blender anyway, solves all kinds of problems.

Mar 27, 2022 at 0:29 comment added Jeff Chen Thank you for the help. It was a combination of not applying scale and having Offset Even turned off that made it so I couldn't find a relationship between the thickness parameter and actual thickness. Now it works as expected!
