How to create a gradient in weight paint in the middle of the plane?

    $\begingroup$ What is the topology of your plane exactly, just 2 faces? You could hide half of the plane and weight paint but it would be faster to assign to the vertex group directly $\endgroup$

You could select half of your object:

In Weight Paint mode activate the Paint Mask option and use the Gradient brush:

Then invert the selection and redo the weight paint for the bottom.

Or you can use the Gradient brush with this kind of custom profile and drag the brush from the top to bottom of the object:

    $\begingroup$ There is also a Gradient tool inside the Weight menu that you can combine with the falloff to get the result $\endgroup$
